Unfortunately, the world has discovered that soy lecithin is an emulsifier that is cheaper than Cocoa Butter. Because "most" people do not have a reaction to highly refined soybean oil, most restaurants and food labels will not even list food as containing soy if it "merely" contains soybean oil. [read more]
